As Indonesian, I fully agree with uncle. It's not gado gado anymore.
We have at least three of famous Indonesian Salad bases with peanut sauce:
– Gado Gado
– Karedok
– Lotek
Diffrent cooking (steam, fresh or mix), or using a main vegetable (like leunca for karedok). It's diffrent taste. And he should paria to gado gado so we can get a bitter taste. That's the real name of gado gado ( sweet, sour, savory, and bitter).

Just grind with traditional Indonesian tool made of stone called 'ulekan'..some chili ,little bit garlic,shrimp paste,brown sugar,little bit salt..grind then mix with fried peanut..a bit tamarind..and all done
